review_highlights:
  - theme: Flavor
text: Many loved the basil mayo and caramelized onions, though some found the flavors didn't quite mesh. Consider adding cheddar for extra oomph.
  - theme: Ease of prep
text: Quick and fun to make, but watch out for messy assembly. Pat chicken dry and go easy on the sauce to keep sandwiches intact.

Wash and dry all produce. Cut @sweet potatoes{2%unit} into ½-inch-thick wedges. Toss on a #baking sheet{} with a drizzle of @olive oil{1%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Roast on the top rack until browned and tender ~{18%minutes}.

Meanwhile, halve, peel, and thinly slice @onion{1%unit}. Thinly slice @tomato{1%unit} into rounds. Season tomatoes with salt and pepper.

Heat a large drizzle of olive oil in a #large nonstick pan{} over medium-high heat. Add onion and a pinch of salt. Cook, stirring occasionally, until browned and softened ~{6%minutes}. [-- TIP: Feel free to make your basil mayo while the onions cook! --] Stir in @brown sugar{1%tbsp} and @balsamic vinegar{1%tbsp}. Cook, stirring, until onion is jammy ~{1%minute}. Remove from heat; transfer to a plate and cover with foil to keep warm. Wipe out pan and let cool.

Pat @chicken cutlets{20%oz} dry with paper towels; place between two large pieces of plastic wrap. Pound with a mallet or rolling pin until chicken is about ½-inch thick. Season all over with half the @italian seasoning{1%tsp}, salt, and pepper. Heat a drizzle of olive oil in pan used for onion over medium-high heat. Add chicken; cook until browned and cooked through ~{5%minutes} per side.

Meanwhile, halve and toast @brioche buns{2%unit}. In a #small bowl{}, combine @mayonnaise{2%tbsp} and @basil paste{1%tsp}. Optionally, cook @bacon{4%strips} until crisp.

Spread buns with basil mayo. Top with herby chicken, caramelized onion, and tomatoes. Serve with sweet potato wedges on the side.
